Why does my matcha taste bitter?
Usually it's water that's too hot, too much matcha powder, or matcha that's gone stale. Use 175ยฐF water (not boiling), measure your powder, and make sure your matcha is fresh.

Why does my matcha taste fishy?
A subtle oceanic or seaweed note is normal in matcha (it's the umami). But if it tastes actually fishy, your matcha may be low quality, stale, or contaminated.

Why is my matcha clumpy?
Matcha naturally clumps due to static electricity and moisture. Sift it before whisking, and use proper whisking technique. A fine mesh strainer and a bamboo whisk solve most clumping issues.

Why is my matcha not bright green?
Dull matcha color usually means it's low quality, stale, or has been exposed to light. Fresh, quality matcha should be vibrant green โ think spring grass.
